Baked olives in olive oil
Olives of the variety Leccino are harvested in their technological ripeness and are debittered in unrefined salt from the Sečovlje salt pans. After the debittering process they are dehydrated in a furnace. The olives have an intense, slightly smoky flavour.
They are suitable as a side dish to dried meats.
